With anything freshly purchased at the grocery store, there are always certain technics you need to learn so you know that you’re purchasing the freshest ingredients.
Same goes with ginger. When you shop for ginger, look to find ginger that is firm and has smooth skin. Try to avoid any ginger with wrinkled skin, soft spots or mold.
In order to get the most benefits out of your ginger, try to grate or press it in a garlic press. I like to juice it with my greenstar juicer.
Storing it is just as important. First you peel it and if you know you are not going to use it right away, freeze it.
First thing you do to maintain your ginger’s freshness is peel all of the ginger right when you get home. Wrap it in plastic and freeze until you are ready to use it. Not only does it retain most of its freshness, but it is much easier to slice and grate when it is frozen.
I prefer not to freeze it because you may lose some of the natural live enzymes.
