I love cookies! I can’t stay away from them. But I hate when you feel guilty after eating 5 or 6, ok 7 of them in one sitting. How about a raw cookie that fills up your temptation after one? On top of that, it’s the best cookie you will have ever created in your life time. Yes, we all have our own opinion about what the best could be like, but this recipe I am about to share is a must try!
This amazing treat is exactly what you need when your sweet tooth calls. The enzymes in a raw cookie are able to digest and break down the components you consumed. Giving you a guilt free cookie pleasure!

Almonds
Shredded coconut
Dates
Vanilla extract
Sea salt
Raw honey
Cacao powder
Coconut butter
Lemon
Cashew butter (optional)
Cookie time
1 cup of raw almonds (soak over night) INSTRUCTIONS
1/3 cup shredded raw coconut
7 dates pitted
1 1/2 tsp of vanilla extract
1 dash sea salt
2 tbsp Raw honey
.33 cup Cacao powder
1.Blend together the 7 ingredients in a food processor until it builds into a dough.
Option: Pre-blend the almonds or do what I do and put the almonds through your juicer on your ice cream, nut setting. Unless you want the extra almond crunch in your dough.
2. Ball up dough and mold to form a cookie. You can flatten or roll out the dough and cut into different shapes. I just do everything by hand.
3. You can either put in a dehydrator at 105 degrees. Remove the cookies when you have reached the texture you love. I don’t want my cookies crispy. I like them moist and doughy. Almost like a fudge texture. If you don’t have a dehydrator you can put the cookies in oven at the lowest temperature and at the lowest part of the oven. Keep oven door open and keep a rotation pattern with the tray.
Raw food consumers wouldn’t consider the cookies raw by this method because the cookies shouldn’t be exposed to degrees higher than 116 degrees. Temperatures above 116 degrees kills enzymes in the food.
Pull the tray out and turn the cookies on the other side and put back in oven. They shouldn’t be hot to touch. But of course always use an oven mitten to remove the tray.
Center cream
.66 cup coconut butter
1 tsp Vanilla extract
1/2 tsp lemon juice
2 dashes of Cinnamon
2 tbsp of raw honey
1. mix all ingredients together and taste test the mix until you reach the taste you love. Feel free to add more honey, take some away or add a couple tbsp of cashew butter!
Optional: I love honey and use it all the time. I take a knife and layer the insides of the cookies with the honey! It’s unbelievably good!
Warning: Do not store cook cream in refrigerator it will get extremely hard and destroy the center of the cookie.
That’s it! It might sound like a lot but it takes me 10- 15 minutes to make. Less time than baking regular cookies!
